Why Everyone Will Love This Recipe

This sushi offers a combination of savory chicken and beef with the freshness of avocado and the slight crunch of sesame seeds. The seasoned rice adds subtle sweetness and tang from rice vinegar, balancing the flavors. Rolling the sushi ensures each bite has the perfect proportion of meat, rice, and vegetables. It’s a fun, hands-on recipe that’s as enjoyable to assemble as it is to eat.

What Is Chicken and Beef Sushi?

Sushi originated in Japan over a thousand years ago as a method of preserving fish in fermented rice. Modern sushi has evolved into a diverse cuisine incorporating raw and cooked proteins, vegetables, and rice seasoned with vinegar. Chicken and beef sushi is a contemporary fusion variant that uses cooked meats instead of raw fish, making it approachable for those new to sushi. It maintains the essential sushi characteristics—seaweed, seasoned rice, and balanced fillings—while incorporating Western proteins and flavors for a hearty, protein-rich twist.

Cooking Tips

  • Use short-grain or sushi rice for optimal stickiness and ease of rolling.
  • Mix rice vinegar, salt, and sugar to season the rice while still warm for even absorption and flavor.
  • Marinate beef briefly with ginger and olive oil to enhance flavor and tenderness before rolling.
  • Fry chicken strips in a light batter to maintain juiciness while adding a subtle crunch.
  • Place nori seaweed on a bamboo mat covered with cling film for easy rolling and cleanup.
  • Flip the nori sheet so the rice faces the mat when rolling to ensure compact, evenly shaped sushi rolls.
  • Slice rolls with a sharp knife wiped clean between cuts for neat, uniform pieces.

How to Store

Store uncut, assembled rolls in the refrigerator for up to 6 hours. Keep tightly wrapped in cling film to prevent the rice from drying out.

How to Make Chicken and Beef Sushi

Rinse the rice thoroughly, then place it in a heavy-bottomed saucepan and pour in an equal amount of water.

Cover with a lid. Let the rice cook by absorption for about 12 minutes, without stirring. Once done, turn off the heat and let it rest for 5-10 minutes.

Meanwhile, collect the rice vinegar, a pinch of salt and the granulated sugar in a saucepan.

Melt on the fire, then turn off the heat and set aside.

Once the resting time has elapsed, remove the lid and transfer the rice to a bowl.

Sprinkle with the prepared dressing, then gently fluff the rice with a ladle and set aside.

Place the beef pulp cut into strips in a bowl and season with a small piece of grated ginger root and a drizzle of extra virgin olive oil; then cover with cling film and let it rest at room temperature for about 15 minutes.

Prepare the batter: sift the rice flour into a bowl and add the iced sparkling water, then mix thoroughly with a whisk until the mixture is smooth and lump-free.

Dip the chicken breast cut into sticks into the prepared batter and eliminate the excess.

Dip the chicken in plenty of boiling seed oil.

Fry the chicken fingers until golden and crispy, then remove them with a slotted spoon and let them drain on a sheet of kitchen paper.

Cut a sheet of nori seaweed in half, horizontally, and place it on a bamboo placemat covered with cling film, then distribute a few spoonfuls of rice on the surface.

Compact the rice well with your hands.

Sprinkle with white and black sesame seeds.

Gently flip the seaweed onto the mat, placing the rice side down on the film.

Gently flip the seaweed onto the mat, placing the rice side down on the film.

Roll the roll up on itself using the bamboo placemat and tighten well.

Seal the roll obtained with the transparent film, closing the ends like a candy.

Proceed in the same way with the beef and avocado sushi.

Then free the rolls from the film and cut them with the help of a knife, so as to obtain 6-8 regular slices.

Arrange the meat sushi on a serving plate.

Bring the meat sushi to the table and serve, if desired, with a small bowl of soy sauce. Enjoy!
