This feta and olive brioche recipe is a perfect savory bread full of the brininess of feta cheese and black olives. The bread bakes to a wonderful fluffy texture and has a buttery flavor from fresh butter.

To make the feta and olive brioche, you first make a dough by mixing milk with sugar, yeast, eggs, flour, and butter. Then, once it has doubled in size, it gets divided into 12 pieces before being stuffed with a feta and olive mixture and arranged in a baking pan before being sprinkled with sesame seeds and baked in the oven.

What is Feta and Olive Brioche?

Feta and olive brioche is inspired by classic French brioche that is enriched with eggs and butter to produce a rich tasting bread. This version is stuffed with feta and black olives, and baked into a solid round loaf.

Pro Tips

  • Use fresh yeast to ensure that the bread dough rises successfully.
  • Don’t overheat the milk. The ideal temperature is between 100 F and 110 F (37.7 C and 43.3 C).
  • If your dough is rising quite slowly, you may need to move it to a warmer location in your home such as on top of a fridge or in a turned off oven.
  • If you or anyone in your family is allergic to sesame seeds, you can replace them with poppyseeds, flaxseeds, or sunflower seeds instead.

Frequently Asked Questions

Is Brioche Good With Feta?

Yes, the rich buttery taste of brioche pairs beautifully with crumbly feta cheese as brioche leans rich and slightly sweet and feta cheese is salty and savory.

Can I Use Green Olives Instead of Black Olives?

Absolutely, whatever olives you have will work well in this recipe.

How to Tell That the Bread is Baked?

You will know that the bread is fully baked when it is golden and sounds hollow when tapped on the bottom. You can also test it with an instant-read thermometer. A fully baked loaf should be around 200 F (93.3 C) internally.

How to Store Feta and Olive Brioche

The feta and olive brioche can be placed in a sealed bag or container at room temperature for up to 1 to 2 days, or stored in the fridge if you would like it to stay fresh for a little longer. You could also freeze it for up to 3 months.

How to Make Feta and Olives Brioche

In a bowl, mix the milk with the yeast and sugar until combined. Whisk in the egg and egg white. Sift in the flour and stir until combined. Add the butter and knead until a smooth dough forms. Cover it and allow it to rise for 1 hour.

Divide the dough into 12 pieces, cover them, and set them aside to rise for 15 minutes. In a bowl, stir the feta with the olives until combined.

Roll each portion of dough out into a circle, add some of the feta mixture, and wrap the dough around it to create a ball.

Flatten the balls, dip them in olive oil, and arrange them in a round baking pan so they overlap.

Brush the bread with the egg yolk and sprinkle it with sesame seeds. Bake it in a 360 F (180 C) oven for 40 minutes.

Serve and enjoy!
