How to Make Hard-Boiled Egg Fritters

This recipe comes together quickly! Mashed the boiled potatoes, add the rest of the ingredients, and form into patties. Fold the patties around the hard-boiled egg quarters and fry.


If you prefer your fritters cheesy, you can add grated cheese or crumbled feta to the mashed potato before forming the patties.

Feel free to use other herbs you like (basil, oregano, or coriander will all work).

Make sure the fritters are all equal in size by using a ¼ measuring cup (or large ice cream scoop).

Use a potato masher (don’t use a food processor). This will over-process the potatoes and make them gluey.

Use an oil suitable for frying at higher temperatures such as canola oil or corn oil. Don’t make your oil too hot, otherwise, the fritters will burn too quickly. Use a thermometer to heat the oil to about 350°F. Don’t overcrowd the pan, as this might cool the oil down too quickly.

Can I Make It Ahead of Time?

The fritters are best served freshly cooked, while they’re hot and crispy.  But if you’re making a large batch, you can keep the fritters warm in the oven at 200°F (100°C).

How To Serve Hard-Boiled Egg Fritters

When serving them as appetizers, serve them with ketchup, sweet chili sauce, or mayonnaise.

For breakfast, serve them with a few strips of crispy bacon or cooked ham.
