This recipe skips the intimidating techniques often linked to traditional croissants and instead focuses on creating soft pastries with a simple method. This leads to a batch of golden croissants with a tender interior that pairs perfectly with breakfast, brunch, afternoon coffee, or even as a sweet snack throughout the day.

The dough comes together with flour, milk, yeast, condensed milk, butter, and an egg before being left to rise until light and puffy. After shaping each piece into the classic crescent form, a final rest gives them extra lift before baking.

What Are Croissants?

Croissants are one of the world's most recognizable pastries, celebrated for their elegant crescent shape and rich baking tradition. Although many people immediately associate them with France, historians generally agree that the croissant evolved from Austria's kipferl, a crescent-shaped bread enjoyed centuries before French bakers transformed it into the pastry we know today.

Traditional croissants are made through an elaborate laminating process that involves repeatedly folding dough with layers of butter. This simplified version delivers a wonderfully soft texture using an enriched yeast dough instead, making it much more approachable for home bakers.

Pro Tips for the Best Croissants

  • Allow the yeast mixture to rest until it becomes foamy. This simple step confirms that the yeast is active and ready to help the dough rise.
  • Spend at least five minutes kneading the dough. Proper kneading develops gluten, creating a softer and lighter final texture.
  • Roll each triangle snugly without squeezing too tightly. This helps the croissants keep their shape during baking.

Frequently Asked Questions

Can I Make These Croissants Ahead of Time?

You can prepare the dough the day before and let it rise slowly in the refrigerator overnight. The following day, allow it to return closer to room temperature before shaping and continuing with the recipe. This approach also helps fit baking into a busy schedule.

Why Didn't My Dough Rise?

Inactive yeast is often the main reason. Check that your yeast is fresh and that the milk wasn't too hot. Cold rooms may also slow fermentation, so placing the bowl somewhere slightly warm can help encourage a proper rise.

Why Is Condensed Milk Used?

Condensed milk adds sweetness while also contributing to a softer crumb. It gives the dough extra richness without requiring many additional ingredients.

How to Store Leftovers

They can be stored at room temperature for up to two days. You can refrigerate them for up to five days. Just warm them briefly before serving to refresh their texture. They can also be frozen for up to two months.

How to Make Fluffy Croissants

Combine lukewarm milk, sugar, and dry yeast in a bowl, then let the mixture sit for 10 minutes.

Mix in the egg, condensed milk, and melted butter to the foamy yeast mixture.

Add the flour along with a pinch of salt to the wet ingredients. Mix until a dough forms, then knead for at least five minutes until it becomes smooth. Cover the bowl and allow the dough to rise for 2 hours.

Transfer the risen dough onto a lightly floured surface and divide it into nine equal portions. Roll and fold each dough as shown in the picture above.

Starting from the wide end, roll each triangle toward the tip to create the traditional croissant shape.

Place the shaped croissants into a 20×20cm square baking pan, and let them rest for another 30 minutes.

Brush the croissants with egg wash and bake in a preheated 180°C (350°F) oven for 20-25 minutes.

Allow the croissants to cool for several minutes before serving.  Enjoy!
