But why does the sponge absorb them so easily?
It's all a question of its very composition, as Francesco Poliandri, a chef consultant and food safety expert, explained on his social media : "Sponges have a porous structure, retaining moisture and nutrients, creating an ideal environment (incubator) for the proliferation of pathogenic bacteria such as Salmonella, Campylobacter, E. coli, Staphylococcus, and Listeria. In addition to their porosity, the bacteria inside the fibers create a protective matrix called biofilm, which shields them from the action of normal detergents, making simple surface cleaning completely useless."

Precisely for this reason, it is essential not only to change the sponge frequently, but also to sterilize it periodically: simply rinsing it under water isn't enough to eliminate this type of bacteria, especially once the sponge has come into contact with food. Therefore, it is necessary to sterilize it at high temperatures, the only ones that can kill almost 100% of the bacteria present on the sponge itself. What are the best methods and which ones should be avoided? Here is all the expert's advice.
The Best Methods for Disinfecting Sponges
Very high temperatures are the best way to prevent bacterial growth on kitchen sponges. In fact, there are three best methods for disinfecting sponges (according to specific scientific studies, including those from the U.S. Department of Agriculture), and all involve high temperatures, as Poliandri explains:
- Microwave oven (the most effective), guarantees the elimination of 99.999% of microbes.
- Dishwasher, a full cycle at high temperature (with drying) is a method almost on par with the microwave.
- Boiling in water for a few minutes is a valid method for thermal disinfection.
These three very simple procedures are ideal for those who have both appliances, as well as those who don't but are still looking for an effective way to sterilize sponges. The microwave remains the most effective method for sterilization, a recommendation supported by a study conducted by the U.S. Department of Agriculture; Poliandri suggests that "the sponge should be completely wet (soaked in water, not just damp) and placed in the microwave on full power for 1 minute. The steam generated is what kills the bacteria in the sponge."

The dishwasher is also a good option, ensuring a result almost similar to that of the microwave: a complete cycle at a high temperature, including drying, allows you to thoroughly sterilize your sponge, so you can reuse it before having to replace it. If you don't have a microwave or dishwasher, the good old-fashioned boiling method also works well: bring a pot of water to a boil and immerse the sponge for about 5 minutes, a simple but effective way to eliminate accumulated bacteria. However, remember the expert's warning: "If the sponge has been used to clean risky residues such as raw eggs, raw meat, etc., the safest option is to throw it away immediately."
How Often Should The Sponge be Disinfected?
In practical terms, how often should a sponge be disinfected and how often should it be replaced? A good rule of thumb is to disinfect kitchen sponges every 2-3 days and replace them completely every 1-3 weeks, depending on their use. They quickly accumulate bacteria and mold even when sanitized, and in any case, sterilizing them too often can ruin them and make them less effective at removing dirt. Generally, the warning sign that it's time to replace a sponge is the appearance of bad odors, a sure sign that it has accumulated a high bacterial load. Poliandri suggests a rather useful practice for extending the life of your sponges: rotation and drying: "Use two sponges on alternate days: while one is in use, the other should air dry completely. Drying stops microbial multiplication."
Methods to Avoid When Cleaning Sponges
Remember that we are not talking about superficial cleaning but rather actual sterilization: this requires methods that employ high temperatures, while some methods suitable for other situations are completely ineffective, if not downright harmful, but in this case, they should be avoided altogether. The expert recommends not using natural methods, such as immersion in vinegar, lemon, bicarbonate of soda, or solutions such as ammonia: "These natural or household products have proven to be completely ineffective for the deep disinfection of fibers." In fact, these are products that degrease and deodorize, but they are not sufficient to eliminate all the bacteria and pathogens nested in sponges.

It's best to avoid using bleach on a dirty sponge. "Soaking a dirty sponge in a bleach solution (hypochlorite) is often ineffective." Francesco Poliandri explains: "The large amount of organic material (fats and proteins) present in the sponge ‘sequesters' and neutralizes the chlorine, preventing it from working. Bleach only works on sponges that have already been degreased and cleaned." Furthermore, due to the spongy nature of the object in question, bleach residue can become trapped in the porous fibers of the sponge, potentially leading to a risk of food poisoning when in contact with dishes and food, especially since thorough rinsing is difficult to ensure.
