In Tunisia, particularly around Sfax and the island of Djerba, fish couscous developed into a signature dish, often prepared with spicy tomato-based sauces, herbs, and locally caught fish. Over time, the recipe spread across the Mediterranean through trade and cultural exchanges, inspiring variations in places like Sicily, where centuries of Arab influence helped introduce couscous and adapt it to local seafood traditions. Today, fish couscous remains a symbol of coastal cuisine, blending simple ingredients with the flavors of the sea.

What Else Can I Add to Fish Couscous?

Extremely versatile, seafood couscous can be enriched with clams, prawns, or other favorite seafood, depending on the fresh catch available. If desired, you can flavor the dish with a pinch of turmeric, curry, or saffron powder. You can add chopped parsley and other herbs of your choice, or, for a pleasantly spicy note, you can sprinkle fresh chili pepper slices on the mussels to open them during cooking. If you like, you can flavor the broth with a bay leaf, or you can add scorpion fish, red mullet, or other soupy fish to the heat.

How to Make Fish Couscous

In a large pan, brown the garlic with a drizzle of oil and a few parsley stalks, then add the mussels, deglaze with white wine, cover with a lid, and let it open over high heat. When finished, turn off the heat and strain the cooking liquid.

Transfer the mussels to a bowl, cover with cling film and keep them warm aside.

Clean the shrimps: remove the dark filament from the intestine.

Remove the head and shell and place the scraps in a bowl, then place the cleaned shrimps in another bowl and set aside.

Prepare the fish stock: toast the heads and shells of the shrimps in a saucepan with a drizzle of oil.

Then add the hen and let it brown.

Combine the roughly chopped herbs with the knife and pour in the water.

Finish with the tomato puree and the filtered mussel liquid.

Simmer gently for half an hour, skimming the broth occasionally with a spoon.

Meanwhile, clean the calamari: cut the mantle into rings and cut the tufts into small pieces.

Once the cooking time of the stock has elapsed, remove the hen and eliminates shrimp odors and waste.

Then filter the fish stock.

Skin the hen and remove the pulp.

Heat a drizzle of oil in a non-stick pan, then add the calamari and let them brown for 2-3 minutes; one minute before the end, add the shrimps, season with salt and pepper and flavor with a ladle of fish stock.

Place the couscous in a large bowl and pour in 500 ml of fish stock.

Cover with cling film and let it rest for 5 minutes, or until the liquid is completely absorbed.

Meanwhile, shell the mussels: keep some aside with the whole shell for the final garnish.

Once the resting time has elapsed, fluff the couscous with the prongs of a fork.

At this point add the seared calamari and shrimps, the redfish meat and the shelled mussels and mix carefully: set aside some shrimp and squid.

Arrange the seafood couscous on a serving dish, top with the whole mussels, shrimps and reserved squid rings and season with chopped fresh parsley. Bring to the table and serve. Enjoy!
