Noma to Reopen on August 5th, With Pablo Soto as The New Head Chef

A Mexican chef, who joined Noma as an intern and became head chef in 2023, Soto will lead the restaurant's kitchen in its first season without René Redzepi as operations director.

After resigning in March amid controversy over working conditions at the restaurant, Noma will reopen on August 5th. The announcement marks the return of the restaurant founded by René Redzepi, but with a different management structure than the one that made him one of the most influential names in contemporary fine dining.

The Danish chef will not be returning to helm the restaurant: Redzep will retain his role as creative director and continue to oversee projects related to ingredient research and technological development, while day-to-day management will be handed over to a new management team composed of professionals who have trained at Noma. The announcement came on June 10th via a video posted on social media from Los Angeles, where the restaurant is currently busy with its pop-up.

Who Will Lead Noma?

The new organization is based entirely on long-standing staff. Annika de Las Heras, who joined the team in 2012, will assume the role of CEO and lead the restaurant's corporate and organizational structure. Mette Brink Søberg, who has been at Noma since 2013, will be responsible for research and development and will coordinate the work of the test kitchen and menu design. Leadership of the kitchen will pass to Pablo Soto, who joined in 2017 as an intern and has risen through the ranks over the years to become Executive Head Chef. This appointment emphasizes internal continuity and formalizes the transition of operational responsibilities to a new generation of managers and chefs trained within the restaurant.

Redzepi's Role After His Resignation

In the video posted on social media, Redzepi explained that he will continue to collaborate with Noma, overseeing the creative aspects of the project. "The new leadership has my full support," the chef stated, adding that he will remain available to support the team when needed. The reopening therefore represents the first real test for the restaurant following its founder's departure: for the first time since Noma's inception, operational management will not be in Redzepi's hands.

Goodbye to Seasonal Menus

In addition to the new leadership, the dining format will also change. Noma will abandon the seasonal menu system that has characterized its offerings in recent years; in their place, menus will be updated monthly, with a more rapid rotation than in the past. The restaurant will be open Wednesday through Saturday and will offer a menu priced at 4,500 Danish kroner, approximately 685 dollars. Reservations have reopened on June 24th.

Absence From the 2026 Michelin Guide

The announcement comes just days after the presentation of the Michelin Guide Nordic Countries 2026, from which Noma was absent. In a statement released before the ceremony, the restaurant explained that it had agreed with Michelin to exclude itself from this year's edition following the closure of its Copenhagen location in January. In the same statement, it promised updates on the project's future in the coming weeks. The updates arrived on June 10, confirming the reopening and the new organizational structure. Starting in August, Noma will return to its Copenhagen location, but without René Redzepi at the helm.
