Collect the sugar in a bowl and grate the orange peel (1).


Squeeze the juice (2).


Stir until the sugar dissolves (3).


Add the eggs (4).


Whisk well (5).


Pour the extra-virgin olive oil (6).


Continue to mix vigorously (7).


In another bowl, mix the flour with the baking powder (8).


Pour in the liquid ingredients a little at a time (9).


Mix until the mixture is smooth and fluid (10).


Pour the mixture into the buttered and floured muffin molds and fill them up to ¾  full (11). Bake at 180° C (356° F) and cook for about 25 minutes, or until the muffins are puffy, golden brown on the outside.


After baking time, take the muffins out of the oven and let them cool. Turn them out of the mold and serve (12).
