Fritters go by many names, but basically, it’s any type of meat, vegetable, or fruit that has been battered and fried. It can even consist of just a piece of dough too. This Pineapple fritter recipe is easy, as it does not require a lot of preparation. Simply batter slices of pineapple, and fry. It’s a quick and easy way to make a fruity dessert. And because you can use canned pineapple, it’s a great dessert for those days when you get unexpected guests.

Pineapple Fritter Ingredients

Pineapple – you can use either fresh or canned pineapple. Fresh pineapple will be slightly more tart and crunchy, whereas canned pineapple will be softer and sweeter.

Flour – use all-purpose flour.

Vegetable oil – use an oil suitable for frying at higher temperatures (in other words, an oil with a high smoking point). These can include canola, peanut, sunflower, corn oil, and more. Don’t use olive oil!

If you’re short on time, you can also use premade pancake batter.

Don’t make the recipe too far ahead in advance. The fritters will become soggy. The batter should be used within an hour that you make it. This is because baking powder is necessary to create nice and fluffy fritters. If it sits too long, it won’t have the same effect and might leave your fritters with a chemical aftertaste.

When using canned pineapple, make sure to thoroughly dry the pineapple rings by patting them with towel paper.

Don’t make your oil too hot, otherwise, the fritters will burn before it’s completely cooked through. But don’t make it too cold either. Then it will take longer to fry, and the fritters will absorb too much oil, leaving them soggy. Use a thermometer to heat the oil to about 350°F.

Don’t overcrowd your pan otherwise the oil will become too cold and you’ll be left with soggy fritters.

You can also cook the fritters in an Airfryer. Place on parchment paper and cook for 10 minutes at 350°F, turning halfway. Don’t overcrowd the basket, only cook about 4 at a time.

Make them healthy by simply leaving out the batter and grilling the slices just as they are!

For extra fruitiness, you can add ½ cup mashed banana to the fritter dough.

Serve them with fresh whipped cream, or a scoop of vanilla ice cream.

The Chinese version of this recipe simply makes use of chopped pineapple combined with a fritter batter. The fritters are then fried and served with a toffee sauce.

How To Store Pineapple Fritter Rings

The pineapple fritters are best served warm. You can keep them in a low oven while you prepare the whole batch. Once all the fritters are finished, you can add the caramel sauce and powdered sugar.
