Savory Oatmeal is a light and nutritious one-pot meal, designed especially for healthy food lovers. It's a savory variation of oat porridge, the Anglo-Saxon recipe, prepared quickly and easily here by cooking the oat flakes in boiling vegetable broth instead of hot milk.

It only takes a few minutes to bring it to the table. Once the cereal has been cooked over low heat until soft and fluffy, simply divide it into individual bowls and enjoy, according to your taste, hot or at room temperature. The result will be a flavorful and creamy soup, perfect for serving with your favorite ingredients for a quick yet satisfying lunch.

How to Make Savory Oatmeal

Immerse the eggs in a saucepan with cold water and let them cook for 5 minutes from when it starts to boil.

Meanwhile, pour the vegetable broth into a pan with high edges and bring to the boil.

Combine the oat flakes. Mix with a spoon and let it cook on low heat for about 10 minutes.

When the oat flakes are cooked and well softened, remove the creamy mixture from the heat.

Once the cooking time is up, pass the hard-boiled eggs under running water, let them cool and then shell them.

Cut them into slices.

Peel the avocado and cut it into thin slices too, then sprinkle them with a little lemon juice to prevent them from blackening.

Wash the tomato and cut it into wedges.

Distribute the porridge into individual bowls.

Add a few slices of hard-boiled egg and avocado.

Add the tomato too.

Complete with a sprinkling of mixed seeds.

Garnish with a sprig of basil, bring to the table and serve. Enjoy!

What to Put in Oatmeal to Make It Savory?

For a healthy, well-balanced meal that provides the body with the right amount of macronutrients, we've enriched the porridge with hard-boiled eggs, avocado slices, tomato wedges, and mixed oily seeds. But if you prefer, you can add whatever you have at home to the porridge, such as diced provola cheese, smoked salmon, pre-cooked legumes, grilled vegetables, Taggiasca olives, desalted capers, tuna fillets in brine, and more.

Depending on the desired consistency, you can add more or less liquid during cooking. For a pleasantly aromatic note, you can spice it up with a sachet of ground saffron, a pinch of turmeric, curry powder, or a little smoked paprika. You can also enrich it with tomato puree for a sauce version.

Storage Instructions

Savory oatmeal can be stored in the refrigerator, covered with plastic wrap, for up to 1 day.
