This banana bread is a little different from the cakey banana loaves you may be used to but no less delicious. This bread has more of a fluffy and soft bread-like consistency with the light flavor or banana. It can be served as a breakfast bread with your favorite spreads or even as a snack.

To make the banana bread, you first mix milk with yeast, sugar, eggs, mashed banana, flour, milk powder, butter, and salt. Then, once an elastic dough forms, it is set aside to rise for two hours before being divided into two loaves, set aside to rise again, and baked in the oven. The results are a fluffy and tasty bread that is sweetened with the taste of banana.

What is Banana Bread?

Commonly, banana bread refers to a type of quick bread that is cake-like and leavened with baking powder and baking soda, however, this version is quite different. Rather than it being like a cake, it is closer to a sandwich bread texture with a wonderful sponginess and fluffiness. However, it has the taste of banana in it, which also imparts moisture. It is also leavened with yeast rather than the usual chemical baking leaveners.

Pro Tips

  • Thoroughly mash the banana so that it incorporates into the bread easily.
  • Make sure you begin with yeast that is still alive and is very fresh.
  • Knead the dough until it reaches a smooth and elastic consistency.
  • If you find that your dough isn’t rising quickly, you may need to move it to a warmer location in your home such as a turned off oven.

Frequently Asked Questions

Can I Make the Banana Bread Dairy-Free?

Yes, you definitely could! To do so, simply replace the milk with your favorite plant-based alternative and the butter with plant-based butter or even solid coconut oil.

Can I Add Other Ingredients to Banana Bread?

Yes, similar to other banana bread recipes, feel free to add mix-ins like chocolate chips or chopped nuts, or even spices like cinnamon and nutmeg to warm things up.

How Can I Tell the Banana Bread is Baked?

A good rule of thumb when checking the doneness of yeast-based bread is to check its internal temperature. The bread should reach around 200 F (93.3 C) when it has finished baking.

Cut the dough into two parts and roll each part into a rectangle.
