Bacon Cheddar Tart's recipe is packed with flavor even though there's only a few ingredients. It is great for breakfast, lunch or as a side dish to dinner as it goes great paired with almost anything! Layer the potatoes and cheese as high or low as you would like depending on how large of a tart you would like to make. You can also use regular russet or red potatoes in place of the sweet potatoes and feel free to try other types of cheese as well. With a recipe this versatile, easy and delicious, you just can't go wrong!
Peel and thinly slice the sweet potatoes. Dice the cheddar cheese into small cubes. Lay the bacon in a fan pattern around a 9 inch tart pan or cake pan allowing the bacon to drape over the edge of the pan. Let the slices of bacon overlap each other slightly.
Add a layer of the sweet potatoes slices to the bottom of the pan. Sprinkle with cheese and continue to layer potatoes and cheese until the pan is full. Sprinkle with salt and pepper. Fold the bacon slices over the top of the tart and place the tart on a metal sheet pan. Bake at 350 ̊F for 45 minutes then flip out of the pan onto a tray. Serve and enjoy!
