Baked crunchy avocado is an exquisite and healthy appetizer; a perfect tasty dish to share with friends, that can also become a side dish for a light dinner. Avocado is a precious food; it contains a significant amount of fiber and monounsaturated fats useful for the proper functioning of the heart. In this preparation, its buttery consistency is countered by the crunchy breading, making it delicious even for those who do not love it. After a short passage in the oven, which allows it to keep its virtues intact, your avocado appetizer will be ready to taste.

How to prepare baked crunchy avocado

Cut the avocado in half, horizontally, turning with the blade of the knife around the core. Then remove the two halves by twirling them and remove the seed with a spoon. Finally, put the spoon under the skin of the fruit and, sliding it over the entire surface (1), remove the entire peel by taking out the pulp.

Turn the pulp upside down and cut it with a sharp knife into regular slices, each about 1 cm thick (2).

Open the egg in a small bowl and beat it with a pinch of salt and pepper. Then collect the corn flakes on a plate with a few tablespoons of breadcrumbs and mix. Finally pass the avocado slices on both sides first in the corn starch, then in the egg and finally in the crusty breading (3).

Arrange the breaded pieces gradually on a baking sheet lined with parchment paper. Then bake them in a preheated oven at 200 degrees C for 10 minutes. Then remove the avocado slices from the oven, brush them with a bit oil and cook for another 5-10 minutes. Your baked crunchy avocado is ready to be brought to the table.

Tips

You can also vary the breading; if you do not like a very strong crunchiness, simply bread your avocado in breadcrumbs, or in the breadcrumbs first toasted and then chopped in the mixer. If you prefer, you can use flour instead of cornstarch.

If you love spicy flavors, mix breadcrumbs spices such as turmeric, sweet paprika or curry.

Accompany this dish with a fresh sauce, such as a yogurt sauce or a tzatziki.

Preservation

You can preserve the baked crunchy avocado for 1-2 days tightly closed in an airtight container, but we advise you to eat it freshly made to enjoy all its crunchiness.
