You will be delighted at the ease with which you can prepare this quick savory patty. You can serve it as a healthy snack, use it as a healthy replacement to fatty burgers or sandwiches, or pack it for tiffin for your kids!

INSTRUCTIONS

Preheat the oven to 180 degrees C and line a baking tray with butter paper. In a large bowl, mash potatoes well and then mash it again after adding milk to it.

Add spinach, tuna, cheese, onion, salt, black pepper, and one of the eggs to the mashed potatoes. Mix it all well. Beat the remaining egg in a separate bowl. Shape patty mixture into a round ball and then dip it in flour, then in egg, and lastly into the breadcrumbs.

Shape the patty into flat rounds of ½ inch thickness and then place it on the prepared baking tray.

Repeat this process with the remaining patty mixture. Lightly spray or drizzle oil over the patties and then bake it for 20 minutes or until light brown in color. Serve hot and enjoy!

TIPS

You can make about 12-14 small patties or 7-8 large ones, based on your preference.
