What a perfect snack these beef nachos make and this recipe can probably even pass for a full dinner! Ground beef is perfectly seasoned, cooked and crumbled before becoming the topping for a plate of tortilla chips. Fresh chopped tomatoes, jalapenos and black beans just add to the deliciousness of this recipe and really do make these beef nachos so filling and satisfying. While you can simply microwave these nachos to quickly melt the cheese, it is so much better to wait a the extra time and let them cook in the oven- the cheese will get slightly browned and the chips will stay crispy. Try using a combination of cheeses such as cheddar, swiss and mozzarella to really make these nachos irresistible.

  • In a medium sized skillet, sauté the onions with the olive oil until they begin to turn translucent and soft.
  • Add the ground beef to the skillet and stir, breaking up the beef into small crumbles as you stir.
  • Add the chili powder, garlic powder, onion powder, red pepper flakes, paprika, salt and black pepper to the skillet and stir to season the beef completely. Once the beef is fully cooked and there is no longer any pink spots, remove the pan from the heat and set aside.
  • Place the tortillas on a foiled lined sheet tray and spread them out so they are in a single layer. Sprinkle the cooked beef on top of the tortillas as evenly as possible.
  • Top the beef with the diced jalapeno, diced tomatoes, black beans and cheddar cheese.
  • Place the nachos in a 350 ̊F oven for about 10 minutes or until the cheese is completely melted and the tortilla chips are warm. Serve while hot with the sour cream and lime wedges.

Tips.

-Scoop shaped tortilla chips work really well with this recipe as the little bowl shape will hold in the ground beef and toppings.
-Try adding diced avocado or canned corn to these nachos to make them even more of a full meal
-If you are looking for a little extra spice, add about a tablespoon of sriracha sauce to the ground beef as it cooks.
