On a flat surface like a cutting board, place the slices of bacon and cut them in half lengthwise. For each slice of bacon, you can roll two sausages. Wrap each sausage with a slice of bacon and hold it with a toothpick so the bacon does not unroll. In a small mixing bowl put the sugar and cinnamon and stir very well. The sausages can be cooked in a pan or in the oven, according to the preference of each person. We made them in the oven to ensure that the sausages are kept rolled during the cooking process. Option 1: In a medium skillet, place the sausages wrapped in bacon for frying. It is not necessary to use oil. When the sausages are well browned, lower the temperature and add the sugar and cinnamon, leave in the heat for 5 more minutes. Serve hot with ketchup and mustard as a dip. Option 2: Prepare a baking tray with waxed paper or with a silicone blanket; place the sausages with an inch apart, sprinkle with sugar and cinnamon. Bake at 300F for approximately 20 minutes or until the bacon is golden brown.
