Cabbage Salad

Ingredients

head of cabbage
1 small (approximately 1 lb.) 
Small cucumber
sweetcorn
1 can , drained*
 ham
8 oz., chopped
Scallion
1/3 cup chopped
Mayonnaise
3/4 cup 
Lemon juice
1 tbsp. 
salt
1/2 tsp. 
Pepper
1/4 tsp. 

This great, no cook salad is perfect on a summer day as an accompaniment to grilled meats or fish.

It combines shredded cabbage, ham, cucumber, sweetcorn, scallion, mayonnaise, and lemon juice in a crunchy, creamy, zingy, and refreshing salad that’s easy enough for beginner cooks to make.

Instructions

Shred the cabbage, discarding the core and outer leaves. Cut the cucumbers and ham into small cubes. Place all the ingredients into a large bowl and mix well. Serve immediately. It’s really that simple!

Notes

* I used a small can of sweetcorn, but if you like sweetcorn a lot, you can add a large one.
