Cheesy Pizza Variations

Feel free to any other veggies to this cheesy pizza (it’s a great way to empty the fridge!): mushrooms, leeks, bell peppers, red onions, sweetcorn, and spinach will all work. Just make sure to sauté the veggies beforehand, and cook until all the moisture is removed.

If you want to add other meats, you can also use cooked ground beef, crispy bacon, or shredded rotisserie chicken.

Feel free to add fresh herbs like basil, oregano, cilantro, or parsley.

The cheddar cheese can be substituted with mozzarella, feta, or Swiss cheese.

Tips

Short on time and need to cook the potatoes fast? Cook them in an instant pot. For medium potatoes, place 1 cup of water in the bottom of a 6-quart Instant Pot, then place the potatoes on a rack and cook for 16 minutes. Allow natural pressure release for 15 minutes.

For added texture, use a combination of all-purpose flour and wholewheat flour.

Cook the Cheezy Pizza over medium heat. If the pan is too hot, the bread will burn before it’s fully cooked, and the cheese will not melt.

Ingredients

Milk
90ml (1/4 cup)
salt
All-purpose flour
150g (1 cup)
Butter melted
15ml (1 tbsp)
boiled potatoes, mashed
200g (7 oz)
Mayonnaise
15ml (1 tbsp)
ham in cubes
100g (3.5 oz)
cooked zucchini, chopped
100g (3.5 oz)
Cheddar Cheese
200g (7 oz)
Oil

Instructions

In a bowl, combine the milk, salt, and flour and mix with a spatula.

Add the butter and knead it into the dough until it is smooth and elastic.

Transfer the dough to a bowl, cover with cling film, and refrigerate for 30 minutes.

In another bowl, combine the potatoes with mayonnaise, baked ham, and zucchini, and mix.

Roll out the dough on a floured surface, to a diameter of 30cm/12 inches.

Sprinkle the cheese in the center of the dough, then spread the potato mixture on top. Top with another layer of cheese.

Bring the edges of the dough together and pinch to form a bun.

Turn it over and flatten it slightly with a rolling pin.

Heat the pan with oil on medium-low heat and put the prepared dough into the pan. Brush the surface with a layer of oil, cover with the lid, and cook for 3-5 minutes.

Place a pan on top of the pan, flip it.

Cook on another side until is golden brown.

Serve and enjoy!
