This chicken cordon bleu is a great, fast dinner for two. It's easy to make and it's simply delicious!
INGREDIENTS: 2 big chicken breasts, 3 tbsp mustard, black pepper, salt, 4 thin slices of ham, 6 thin slices of cheese, 2 tbsp flour, 1/4 tsp smoked paprika, 1 large egg, beaten, 1 cup breadcrumbs, 1/2 tsp Provence herbs, 1/4 tsp garlic salt, 1 1/2 tbsp butter, melted, 2 tbsp vegetable oil.
Pound chicken breasts to 1/4 inch thickness, brush with mustard, season with pepper, salt.
Add ham slices and cheese.
Roll the chicken. Mix flour with paprika and sprinkle rolls through a sieve.
Dip in the beaten egg, then in the breadcrumbs.
In the large pan over medium heat, melt butter and vegetable oil and cook chicken rolls until golden brown on all sides, and then bake at 350°F/180° for 25-30 minutes.
