Tips

Use as much or as little salad dressing as you like.

No red onions? Use shallots instead.

Red wine vinegar is a tasty substitute for lemon juice.

Instead of feta cheese, try goat cheese or fried halloumi.

How to Store Chickpea Salad

Cover and store your chickpea salad in the fridge for up to 2 days.

Ingredients

Extra virgin olive oil

Freshly squeezed lemon juice

Garlic, minced

kosher salt and freshly ground black pepper to taste
cherry tomatoes, halved

cucumber, halved and sliced

medium red onion, thinly sliced

feta cheese, diced

How to Make Chickpea Salad

Pour the olive oil, lemon juice, garlic, salt, and pepper into a small bowl.

Mix to combine.

In a large salad bowl, add the cucumber and red onion.

Stir in the tomatoes.

Add the cucumber.

Mix in the feta cheese.

Add in the chickpeas.

Pour the dressing over the salad, then toss well to combine.

Add cilantro.

Mix, serve and enjoy!
