With its Mediterranean-inspired flavors, chickpea salad is a welcome addition to picnics, barbecues, and cookouts. Loaded with healthy delicious ingredients like cherry tomatoes, cucumber, red onions, ripe avocado, and of course, chickpeas (aka garbanzo beans), tossed in a zesty lemon garlic dressing make this easy-to-make chickpea salad a winner for any occasion – weeknight dinners included. Serve your homemade chickpea salad with roasted meats, chicken, grilled veggies, kebabs, or pan-roasted fish.



Use as much or as little salad dressing as you like.

No red onions? Use shallots instead.

Red wine vinegar is a tasty substitute for lemon juice.

Instead of feta cheese, try goat cheese or fried halloumi.

How to Store Chickpea Salad

Cover and store your chickpea salad in the fridge for up to 2 days.


Extra virgin olive oil

Freshly squeezed lemon juice
3 tbsp
Garlic, minced
1 clove
kosher salt and freshly ground black pepper to taste
cherry tomatoes, halved
1 1/2 cups
cucumber, halved and sliced
chickpeas, drained and rinsed
15 oz
medium red onion, thinly sliced
avocado, sliced
cilantro, chopped
1/4 cup
feta cheese, diced
4 oz

How to Make Chickpea Salad

Pour the olive oil, lemon juice, garlic, salt, and pepper into a small bowl.

Mix to combine.

In a large salad bowl, add the cucumber and red onion.

Stir in the tomatoes.

Add the cucumber.

Mix in the feta cheese.

Add in the chickpeas.

Pour the dressing over the salad, then toss well to combine.

Add cilantro.

Mix, serve and enjoy!
