Delica squash au gratin with bacon and smoked cheese is a rich and delicious dish. This is the refined and elegant variant of the pumpkin millefeuille: in this recipe, in fact, the delica squash slices are alternated with those of bacon and smoked cheese, gradually arranging them until you get a pretty rose. The final sprinkling of grated parmesan cheese will give the preparation a truly impeccable gratin. Simple and very fast to prepare, since the delica squash is used with all its peel, it is preferable to prepare more than one ovenproof dish; in fact everybody will love this dish so prepare a lot of it! Use the variety of pumpkin recommended here, the delica one; it has a sweet chestnut pulp and it blends perfectly with the flavor of the bacon and the slightly smoky flavor of the cheese. Serve it as a second or main course and enjoy it hot and stringy at a lunch or dinner with guests; success is guaranteed!

How to prepare the delica squash au gratin with bacon and smoked cheese

Prepare the delica squash; wash it thoroughly under cold running water, then cut it in half and, with the help of a spoon, empty it of the seeds and internal filaments (1).

With a sharp knife cut it into slices about 2-3 mm thick (2).

Arrange the delica squash slices in an ovenproof dish, greased with a drizzle of oil, placing them slightly overlapping (3).

Cut the smoked cheese in thin slices and arrange them on top of the delica squash (4).

Add the bacon (5) and continue in this way, until all the ingredients are used up, bringing you more and more towards the center until you form a rose.

Sprinkle with grated parmesan cheese(6), add a drizzle of oil and bake in a preheated oven at 180 degrees C for about 40 minutes.

After the cooking time has elapsed, take the delica squash out of the oven, season with a grind of pepper and serve it hot (7).


The delica squash au gratin with bacon and smoked cheese can be preserved in the refrigerator, well covered on the surface with a sheet of cling film, for a maximum of 2-3 days. At the time of consumption, heat it in the oven or microwave oven.
