The zucchini gateau is a light and tasty variant of the classic potato gateau. An original and tasty recipe to prepare in a short time; zucchini will be used raw, grated and mixed with eggs, breadcrumbs, ham, scamorza cheese and aromatic herbs. An excellent and fast recipe that will allow you to use all the cured meats and cheeses you have in the refrigerator. Once ready, serve it as a main course, also ideal for a picnic; it is good both hot and cold. Now let’s see how to prepare this soft zucchini gateau with a delicate flavor and a delicious crunchy crust.

How to prepare zucchini gateau

Wash the zucchini and peel them (1). Grate them with a large hole grater (2) and put them in a bowl. Add the egg, breadcrumbs, grated Parmesan cheese, salt, pepper and parsley and mix (3). Also add the diced scamorza cheese and the cooked ham into small pieces and mix them with the rest of the ingredients until you will have obtained a soft mixture.

Grease a baking dish, sprinkle with breadcrumbs and add the dough. Level it well and add a sprinkling of breadcrumbs and grated Parmesan cheese and a few flakes of butter (4). Bake in preheated oven at 180 degrees C for about 20 minutes. Once ready, let the zucchini gateau cool before serving (5), so as to cut it without the risk of breaking it. Preservation

You can preserve the zucchini gateau in the refrigerator for 2 days in an airtight container. Heat it in the oven or microwave oven before enjoying it.
