- Pineapple 3 thick slices
- Rum 1 cup
- Brown sugar 2 tablespoons
- Cinnamon powder 2 teaspoons
- Vanilla Extract 2 teaspoons
What’s even better than fresh pineapple? Grilled pineapple that’s been marinated in rum!
Grilling pineapple slices is so easy and quick, and it makes the flavours more intense. You don’t have to have an outdoor barbeque to enjoy these delicious treats – they’re just as easily made indoors on a ridged griddle pan on your stovetop.
Serve with a scoop of ice cream or creamy Greek yoghurt.
Make the glaze:
Cut three thick slices of pineapple. Whisk rum, brown sugar, cinnamon powder, vanilla extract well in a large bowl.
Add the pineapple slices and soak in the rum and brown sugar liquid for at least 30 minutes. You can also leave it to soak overnight for a more intense flavour.
Heat up the grill pan. Coat the pan with some oil or butter using a paper towel. Place rum soaked pineapple on hot grill, cook for 3 to 4 minutes on medium heat.
If you are looking for beautiful cross-hatched grill marks, rotate pineapple slices on the same side by 45 degrees.
Cook for 3 minutes.
Flip the pineapple slices and cook for 3 minutes on the other side, rotating by 45 degrees like you did with the first side.
Serve up with ice cream or a dollop of Greek yogurt.
