Homemade Cookie Cereal: the healthy breakfast recipe everyone will love

You’ve probably heard of pancake cereal, but cookie cereal? That’s even better. Together with pancake cereal and waffle, homemade cookie cereal was trending on Instagram and TikTok in 2020. It’s like cookies and milk… for breakfast! These are similar to “Cookie Crisp” cereal, but healthier because they’re homemade! Now you have an even better excuse to enjoy cookies and milk—because breakfast is the most important meal of the day!

The cookies are crispy on the outside and slightly soft (but still chewy) on the inside. Don’t add too much milk to the cookies (use less than you would normal cereal), you don’t want the cookies to become soggy before you finish it! Perfect for a special breakfast.

How to make homemade cookie cereal

In a small bowl, add the melted butter, granulated sugar and brown sugar. Mix well with a rubber spatula until fully incorporated.

Add one egg and mix again.

Add vanilla extract, flour, baking powder, and salt and stir again with the rubber spatula until the mixture is smooth.

Add the chocolate chips and mix well.

Scoop the batter into a piping bag.

Use the piping bag to pipe small amounts on a baking sheet lined with parchment paper. If you don’t have a piping bag, you can use a Ziploc bag with the corner snipped off.

Use your finger to flatten the tops slightly.

Bake the cookies for 8 minutes at 350°F/180°C until golden. On a baking sheet with parchment paper, form mini cookies.

Tips

– You can use any of your favorite cookie recipes to make miniature homemade cookie cereal. Simply make the cookies in miniature forms and enjoy with milk.

Vegan substitutes: instead of butter, you can use coconut oil or vegan butter, and instead if eggs you can use flax seed “eggs”. You will also need dairy-free chocolate chips.

– If the cookie batter you use is too thick to pipe, you can use an ice cream scoop to measure out equal amounts of the batter onto the baking sheet.

– You might be tempted to dive right in, but it’s important to cool the cookies properly before you eat them. Adding milk to warm cookies will cause them to disintegrate and fall apart.

– These homemade cereal cookies are so creative, you can even use them as cake decorations, cupcake toppers, ice cream toppings and even smoothies.

– These cookies can be made in advance. Simply store them in an airtight container for up to a week. You can also freeze them (cool them off first) in an airtight container for up to three months.
