The beef broth is a basic preparation and it is used as a starting point for many recipes. The beef broth is prepared by cooking the beef in water with carrots, zucchini, cherry tomatoes, onion, celery and parsley. Since it is very tasty and nutritious, beef broth can be used also with classic types of Italian pasta. Homemade beef broth is a delicious dish, especially for colder days, and it is important to cook it for a long time so as to concentrate all the flavors and give it a more intense color.

How to make Beef broth

Wash the carrots, zucchini, onion and aromatic herbs under running water. Coarsely chop the carrots, zucchini and onion (1).

Rinse the beef under cold running water. In a large pot with high sides put the beef together with all the other ingredients and cover with at least 2 liters of water (2).

Add the fine salt and let it simmer for about 3 hours over low heat until the beef is tender. During cooking, remove the fat that rises to the surface with the help of a slotted spoon or a spoon (3). Once finished, strain the broth. You can serve the beef broth as a single dish with some croutons or use it to cook any type of pasta suitable for broth.

Tips for cooking the best Beef Broth

– After the first boil, lower the heat. The beef broth should cook slowly, it should simmer and not boil.

– To make your beef broth richer, you can also add chicken (leg and wing) and/or hen.

– If you prefer, you can add fine salt but be careful not to make the broth too salty.

– The most used cuts of beef to prepare a lighter beef broth are the shank, the shoulder, or the anterior muscle. If you want to prepare a full-bodied and tasty beef broth, choose the belly, the broth bones or the brisket.

How to store the beef broth

The beef broth can be stored in the refrigerator in an airtight container and it should be preferably consumed no later than 3 days. The beef broth can also be frozen and in this case it should be consumed within 6 months.
