Cooked chickpeas are a real all-rounder in the kitchen: versatile, nutritious, and easy to store, they can be used in a variety of recipes. Besides avoiding waste, having them ready-cooked allows us to save time on busy days. But how do you keep them fresh and flavorful for longer? In this article, we'll reveal all the secrets to storing your cooked chickpeas at their best, so you can always have them available and ready to use in your favorite recipes.
Once you've prepared your chickpeas, it's important to store them properly to keep them fresh and ready to use. Here are the main methods, with their advantages and disadvantages.
How to Store Cooked Chickpeas in The Refrigerator

To store chickpeas for a few days, the refrigerator is the ideal place. Let the cooked chickpeas cool completely in their cooking water, then transfer them to an airtight glass or plastic container, covering them with the cooking water: this will keep the chickpeas moist and prolong their freshness. Place the container in the refrigerator: the chickpeas will keep in perfect condition for 3-4 days. The advantage of this method is freshness: storing cooked chickpeas this way will retain their original flavor for a few days. The disadvantage, of course, is shelf life: you can only store them this way for a limited time.
How to Freeze Cooked Chickpeas

If you want to preserve your cooked chickpeas for longer, you should opt for the freezer. This is a practical method if you have large quantities of chickpeas, which you can divide into portions: this way the chickpeas will keep for several months, up to a year. Let the cooked chickpeas cool completely, then divide them into portions suitable for your use. You can freeze them with or without the cooking water, depending on your preference: remember, however, that aquafaba can be reused in other recipes as a vegan substitute for a thickener. Transfer the portions of chickpeas to airtight containers, eliminating excess air, then place them in the freezer: you can keep frozen chickpeas for 3-6 months. If the pro of this method is the duration, the con is the consistency: once defrosted, the chickpeas may be slightly softer than fresh ones.
How to Vacuum Pack Cooked Chickpeas

Vacuum packing is one of the best methods for preserving raw or cooked ingredients: this also applies to chickpeas. If you have a vacuum sealer, we suggest using this method: vacuum-packed chickpeas can be stored for several months, maintaining their organoleptic properties intact. How? Let the cooked chickpeas cool completely, then transfer them to vacuum-sealed food bags. Use a vacuum sealer to remove the air from the containers. Store the jars or bags in a cool, dark place.
This is the method that allows for the best preservation in terms of flavor, safety, and organoleptic properties: the downside, of course, is the need for a specific tool. Furthermore, vacuum storage can slightly alter the consistency of the chickpeas.
How to Store Opened Canned Chickpeas
If you've opened a can or jar of chickpeas, but have some left over, you can store them for a few days to keep them fresh and safe to eat. Here are some helpful tips:
- Transfer them to an airtight container. Never store chickpeas in an open can: transfer them to a clean, airtight container, preferably glass or plastic. Air is the main culprit for bacterial growth, so make sure the container is tightly closed. Before transferring the chickpeas to the container, you can rinse them under cold running water to remove excess salt.
- Refrigerator. Place the container in the refrigerator immediately: the cold temperature slows bacterial growth and keeps the chickpeas fresh longer.
- Shelf life. Opened canned chickpeas will keep in the refrigerator for about 2-3 days. After this time, it's best to consume them or discard them.

Why not store chickpeas in a can? The inside of a can can harbor bacteria that, upon contact with air, multiply rapidly, stimulating bacterial growth. Some components of the can can react with food, altering its flavor and quality. Again, if you have a large quantity of chickpeas and don't plan on consuming them within a few days, you can freeze them. Transfer them in portions to airtight containers, with or without their preserving liquid, and place them in the freezer. They will keep for several months.
