Key west chicken is a perfect precook grilled dish that you may prepare and freeze for up to a couple of days in advance. Though, it tastes absolutely divine if you prepare this dish for a quick barbeque get together or an impromptu party.

If in case you are not keen on taking the left over cooked chicken for lunch the next day then roughly shred or slice chicken and use it to prepare everybody’s favorite and delicious chicken sandwiches. The best thing about this dish is it requires absolutely no cooking skills yet tastes very restauranty!

Clean the chicken pieces well and then dab them to dry with a kitchen towel. In a small bowl add soy sauce, honey, vegetable oil, fresh lime juice, minced garlic, salt, and mix everything well.

Add the chicken breast halves to the marinade and coat the chicken pieces well from all sides. Cover and let the chicken marinate for about 30 minutes. Meanwhile, heat the grill to super hot temperature.

Place the chicken pieces on to the hot grill and cook them while brushing with marinade sauce in between for 5 to 6 minutes or until the juices start to ooze out from the chicken.

Flip the chicken and cook on the other side as well for 5 to 6 minutes while brushing it with the marinade intermittently. Repeat with the remaining chicken pieces and serve sizzling hot grilled key west chicken on a bed of fresh lettuce and with some fresh lemon slices. Serve hot and enjoy!

You may marinate the chicken for even up to 2 hours to make the chicken more flavorful. You may also replace fresh garlic with a ¾ teaspoon of garlic powder. Turn the remaining marinade in to the dipping sauce by cooking the remaining marinade with ¼ cup of water until it starts to boil. Add 2 tablespoons of honey and about 2 tablespoons of corn starch slurry to the boiling marinade and continue it to boil for a minute until the sauce starts to thicken and has a glossy sheen.
