Lettuce Soup: our recipe for a delicious soup with cheese and crunchy croûtons

This lettuce soup is a creamy and delicate recipe, a warm and hearty dish to enjoy as a main or side during the colder seasons. Very easy to make, this soup only requires you to stew the lettuce with red onions and then blend it together with cream cheese. The result is a bright green, thick and delicious soup, perfect for all sorts of occasions: from a family meal to a dinner with friends, you can serve it with crunchy homemade croûtons, a drizzle of olive oil and black pepper. Everyone will love it.

Preferably enjoyed hot in the winter, you can also try it lukewarm in the spring or in the summer. It will only take you a few minutes to make it and with just a bunch of ingredients – but the result will be outstanding. You can enrich it with almonds and toasted pine nuts, croûtons and you can mix it with robiola, cream cheese, ricotta or mascarpone.


How to store Lettuce Soup

You can store the soup for 1 day in a sealed container in the fridge, but for best results it is recommended to enjoy it as soon as cooked. Avoid freezing it.

Cream Cheese
100 g (1/2 cup)
Red onion
4 to 6 slices
Extra virgin olive oil
Black pepper and salt to taste

How to make Lettuce Soup

Finely slice the red onion and sauté it with olive oil.

In the meantime, wash the lettuce and chop roughly.

Add the lettuce to the sautéed onions.

Stir and briefly cook over a high heat.

Season with salt and pepper, then cook the lettuce for around 20 minutes or until the water released by it will have evaporated. Transfer into the blender.

Blend thoroughly.

Once you get a thick, creamy consistency, add the cream cheese.

Mix again until the soup gets smoother.

Slice the bread into sticks.

Dice the sticks and toast in a pan with a dash of oil.

Pour the lettuce soup in individual bowls.

Drizzle with olive oil, season with ground pepper and add your crunchy bread croûtons. Serve immediately and enjoy.
