The madeira cake is a cake of Anglo-Saxon origin, and it can be an excellent stuffed base for a multi-tiered cake, like the typical birthday cakes, or it can also be coated with sugar paste. It is a cake very similar to the sponge cake, simple and light, ideal to be served for breakfast with a sprinkling of confectioner’s sugar or some fresh fruit. I propose you the recipe for a classic madeira cake, and to make it even tastier I give you some tips to make a stuffed madeira to be served on special occasions.

How to prepare the Madeira Cake

Pour the eggs and milk in a bowl (1), and blend. Put butter and sugar in another bowl (2) and work them with the help of an electric whisk. Add a part of the egg mixture and blend (3).

Gradually add the flour mixed with the baking powder and the vanillin (4), alternating it with the egg mixture. Helping yourself with a whisk do amalgamate well the ingredients (5) until you get a smooth dough, without lumps. Pour the mixture into a buttered and floured cake pan (6).

Bake at 160° C in a static oven for about 1 hour. Check out the cooking with a toothpick and, after you have taken out of the oven your madeira cake (7), let it cool before opening the cake pan. Put it on a cutting board (8) and cut it into slices (9), or cut it in the center to make two or more discs to fill as you like.

Tips

For your madeira cake you can choose either a circular cake pan or a rectangular cake pan. However the doses vary, depending on the size you choose. For a cake pan with a diameter of 24/26 cm follow the doses of the recipe, if instead you have a cake pan with a diameter of 18/22 cm the doses should be halved: 3 eggs, 2 tablespoons of milk, 180 grams of butter, 180 grams of sugar, 200 grams of flour, 1/2 sachet of baking powder, 1 sachet of vanillin.

If you prefer, instead of vanillin you can flavor your madeira cake with some grated lemon peel.

You can fill your madeira cake in many ways, be creative: you can choose the classic stuffing of whipped cream and Nutella, a quick and easy solution for children's birthday parties, or make a slightly more refined version with a cheese frosting, or you can go on the safe side with a delicate and elegant filling of chantilly cream and small strawberries.
