Masks are synonymous with Mardi Gras and carnivals and these sweet bites are just what you need to celebrate.  They’re sweet and crispy, and look just like festive little masks.

These sweet fritters are said to be timeless and make a tasty treat for when you have guests over. With a handful of ingredients, you can make this easy, fun recipe—your guests will love them.

Tips

Don’t have a mask cookie cutter? You can use another cookie-cutter, or make strips with a pastry wheel.

Lay the uncooked shapes on a floured baking tray while cooking the batches. This will prevent them from sticking.

Make “filled” Mask Chiacchiere, but cutting the dough in squares, and filling it with Nutella before frying it. You can also add a mashed banana for a tasty twist. You can also fill it with custard.

If you don’t have white wine, you can use grappa, brandy, rum, or marsala.

For extra flavor, feel free to use lemon or orange zest.

Make sure to use an oil suitable for frying at higher temperatures. These include canola, peanut, sunflower, or corn oil. If you want to reuse the oil, allow it to cool, and strain it. You can use it a few times more for more fritters. Don’t make your oil too hot, otherwise the fritters will burn. Use a thermometer to heat the oil to about 350°F.

It’s important to rest the pastry dough in the fridge. This allows the fat to solidify and the glutens to relax, which means the pastry will be easier to work with.

How To Store Mask Chiacchiere

Store the Mask Chiacchiere in an airtight container (at room temperature) for up to 10 days.

Ingredients
All-purpose flour
250 g (2 cups)
Butter
60 g (1/4 cup)
egg yolks at room temperature
3
salt
a pinch
Sugar
30 g (1/4 cup)
Rum
1 tbsp
White wine
80 ml (1/3 cup)
Oil for frying
Powdered sugar

How To Make Mask Chiacchiere

In a bowl, add flour, butter, egg yolks, salt, sugar, rum, and mix.

Gradually add the wine and mix everything well until you get a dough. When the dough is homogeneous, we let it rest for 30 minutes.

After 30 minutes, place the dough on a floured work surface. Roll out the dough with a rolling pin and create the shape with the mask mold.

Transfer the created mask fritters into the hot oil and fry until they are golden. To remove excess oil, leave the fried fritters on towel paper to drain before sprinkling with powdered sugar.

Decorate with powdered sugar.
