Mushroom Chicken Scallopini is an easy main dish recipe that you can serve with any of your favorite sides. The word ‘scallopini' comes from the Italian word scaloppine which means small scallops. It refers to thinly sliced meat and can refer to dishes made with thinly slides, beef, chicken, or even veal.

In this recipe, the chicken breast is served with a delicately flavored mushroom sauce. The juicy chicken is tender on the inside, and crispy on the outside. The creamy sauce is delicate yet full of flavor, without being too rich.

It’s not difficult to make. The chicken is first dredged in flour, then pan-fried. The rest of the ingredients (mushrooms, chicken broth, parmesan) are added to create a sauce, and it’s cooked until thickened. Who would’ve thought that you can make such a satisfying dish with only a handful of ingredients.

Chicken Scallopini Vs Piccata

Scallopini means thinly sliced meat. In this recipe, chicken scallopini is chicken breast that has been thinly sliced and served with a mushroom sauce. A piccata refers to a lemony caper sauce that is usually served with chicken scallopini. If you were to swap the chicken broth sauce for a lemony caper sauce, it would be a chicken piccata!

How To Make Mushroom Chicken Scallopini

Butterfly the chicken breast by slicing it in half. Flattening the chicken by halving the breast serves two purposes. It helps it to cook faster, but also helps to tenderize it.

Season the chicken breast, dredge in flour and cook until golden. Add the rest of the ingredients (besides the parmesan), and cook. Add the parmesan and continue to cook for another 2 minutes.

What To Serve With Mushroom Chicken Scallopini.

Serve the Mushroom Chicken Scallopini with mashed potatoes (to soak up that delicious sauce!) and sautéed green beans. Or, for a healthier option, go for wild brown rice and roasted vegetables.

You can also serve the chicken breasts with the sauce on pasta. Add a green salad to finish it off.

Tips For Making Mushroom Chicken Scallops

The mushrooms used in this recipe are brown mushrooms, which usually have more flavor. They’re sold under different names. Look for baby Bella, cremini, or portabellini mushrooms.

Feel free to add capers and a squeeze of lime at the end.

Instead of chicken stock, you can use a 50:50 combination of white wine and cream. Alternatively, to make it without alcohol, you can use lemon juice instead of white wine.

You can also finish the dish in the oven. After browning the chicken, transfer to an oven-safe dish with the rest of the ingredients and bake for 30 minutes until golden and cooked through.

How To Store Mushroom Chicken Scallopini

Leftovers can be stored in the fridge for up to 3 days. Reheat in the microwave.

Ingredients

Chicken breasts

Parmesan cheese
12 slices
cremini mushrooms
200 g (2 cups)
All-purpose flour
120 g (1 cup)
Chicken stock
250 ml (1 cup)
Olive oil

Instructions

Slice each chicken breast in half.

Slice the mushrooms. Season chicken breasts with salt on both sides.

Dredge the chicken breast in flour.

Heat up a generous amount of olive oil in a large pan. Cook chicken slices for 2 minutes per side or until golden and cooked through.

Add the sliced cremini mushrooms and pour in the chicken stock. Lower the heat, cover the pan with a lid, and cook for 7 minutes. Meanwhile, slice the parmesan and top chicken with it.

Cover with a lid again and cook for 2 minutes more.

Serve the chicken scallopini with the mushroom sauce.
