Oladi: light and fluffy Ukrainian pancakes!

Buttermilk
½ cup
Warm water
1 cup
Egg
1 large
salt
½ teaspoon
Powdered white sugar
2 tablespoons
Active Dry Yeast
2 teaspoons
Flour
1½ cup
Raisins
ÂĽ cup
Olive oil

These Oladi are excellent pancakes for breakfast and its batter can be prepared well in advance to enjoy a quick yet decadent breakfast treat. Top these with anything you can think of, sweet or savory, and get ready to be charmed by this European delight!

Instructions

Whisk buttermilk, warm water, and egg until well blended. Add salt, sugar, and yeast to this mixture and stir it.

Stir in flour and whisk everything well until no lumps are present. Fold in raisins and keep the batter aside at a warm place for an hour. Heat the oil in a non-stick pan and spread it out evenly. Add heaped tablespoons of this batter onto the hot pan at some distance from one another.

Cook it for a minute or two until slightly cooked at the bottom. Flip the pancakes and cook until golden brown on both sides. Serve and enjoy!

Tips

You may or may not include raisins to this preparation. Add more oil to the pan, if required to prepare the pancakes.
