Preheat the oven to 200 degrees C. Cut the potatoes in to large cubes and lightly dab them with a paper towel. Put potato cubes in to a baking dish and drizzle it with 1 tablespoon olive oil and season it with ½ teaspoon salt.
Mix everything until the potatoes are well coated with oil. Roast the potatoes for 30 to 35 minutes or until they are golden in color and crisp.
Meanwhile, heat 1½ tablespoons of olive oil in a pan. Add the chopped onion to the hot oil and cook it for 2 minutes or until soft. Add the grated garlic, chopped tomato and cook everything for 4 to 5 minutes or until the tomatoes are soft.
Add the tomato puree, sweet paprika, sugar, and remaining salt to the pan. Stir everything and cook on low heat until the mixture is thick and saucy in consistency. Transfer the potatoes in to the serving bowl, top the tomato sauce over potatoes, garnish with sliced basil and enjoy!
You may prepare the tomato sauce in advance and slightly heat it before serving with the roasted potatoes. You may also partially roast the potatoes a couple of days in advance and refrigerate them in an air tight container. Just thaw it well before roasting them again. Alternatively, you may partially roast them in the oven and then toss them on a high heat in a nonstick pan to give the potatoes a nice and even brown coat.
