Pepper patties are delicious and quick to prepare, a vegetarian recipe that you can serve as an appetizer or as a second course, and you can also prepare them for a buffet. To prepare them, just make a dough with peppers cooked in a pan, breadcrumbs, eggs, parmesan cheese and aromatic herbs; you can then decide whether to prepare them fried or baked. The end result will be peppers patties crunchy outside and soft inside; children will love them. So let’s see how to make them in a few simple steps.

How to prepare pepper patties

Wash the peppers and clean them; remove the stem, seeds and filaments. Cut them first into strips and then into small pieces (1). Brown the garlic clove in a pan with a drizzle of extra virgin olive oil, add the peppers and mix. Add salt and pepper and cook on medium heat for 15-20 minutes, mixing often (2). Put the breadcrumbs in a bowl with water to soften it. Squeeze it and put it in a bowl with the peppers, the eggs, the chopped parsley, the parmesan cheese, salt and pepper (3) and mix everything until you will have obtained a soft dough.

Make your patties and pass them first in the flour, then in the beaten egg and in the breadcrumbs. Fry the patties in hot oil until golden brown. Lift them with a slotted spoon and lay them on a plate lined with kitchen paper, so as to eliminate excess oil. Your pepper patties are ready to be served.
