Creamy, sweet popsicles are the perfect dessert for summer. These pistachio popsicles are great for days when you want something cool and refreshing while giving a homemade feel. They’re easy to make, and you don’t need a lot of ingredients: condensed milk, pistachio cream, whipped cream, and chocolate.

They’re great treats for adults and kids alike—who doesn’t love icy desserts in summer? With each bite, you get the delicious flavor of creamy pistachio with the sweetness from the condensed milk and white chocolate. You won’t regret making these chocolate pistachio popsicles, your taste buds will thank you!

How To Make Pistachio Popsicles

Make the popsicle ice cream base. Add the whipped cream, condensed milk, and pistachio cream into the food processor, and blend until smooth. Pour the ice cream mixture carefully into an ice popsicle mold. Add the popsicle sticks, close the mold, and freeze until solid (about 4 to 5 hours).

Meanwhile, melt the chocolate over a double boiler. You can also use a microwave, and microwave the chocolate in 30-second increments until melted. Once the popsicles are frozen solid, gently remove the ice cream from the mold.

Dip the frozen popsicles in the melted white chocolate. Pour some of the white chocolate into a piping bag and drizzle over the popsicles. Sprinkle with crushed pistachios and serve.

Tips For Making Chocolate Pistachio Popsicles

For a coconut flavor, use coconut cream. Or combine the pineapple with ½ cup Greek yogurt, 1/3 cup coconut milk, and ½ tsp vanilla extract.

You can use fruit juice instead of whipped cream, but the popsicles with be more icy than creamy.

If you won’t have a popsicle mold, you can also use plastic cups.

Want to make the popsicles even prettier? Add dried (edible) rose petals!

Make spiced popsicles by adding ½ to 1 teaspoon cardamom powder—it goes exceptionally well with pistachios!

You can sprinkle the popsicles with any other type of crushed nut, or use white chocolate sprinkles, dried cranberries, or coconut flakes.

How To Store Pistachio Popsicles

The pistachio popsicles can be stored in the freezer for up to 3 months. Just make sure to store them in a sealable plastic bag or an airtight container.

Condensed milk
300 g (1 cup)
Pistachio cream
250 g (1.7 cups)
Whipped cream
500 ml (2 cups)
white chocolate, melted
200 g (2 cups)
crushed pistachios for decoration


Pour whipped cream and condensed milk into the food processor, then add the pistachio cream. All the ingredients sit in a fine cream.

Pour the cream mixture into an ice popsicle mold.

Add the popsicle sticks, then freeze for about 4-5h.

Melt the white chocolate on a steamer. Gently remove the ice cream from the mold. If you’re struggling to remove the popsicles, you can run warm water on the outside.

Dip in the melted white chocolate.

Pour a little white chocolate into a dressing bag and drizzle it over to decorate the popsicles.

Sprinkle with pieces of crushed pistachios.
