Also known as Mexican wedding cookies, these biscuits are so small that it is possible to eat them in one bite. Once tasted, you will perceive the flavors of its land of origin: the consistency is so crumbly that they resemble a powder that melts in the mouth with each bite. This characteristic is due to the toasting of the flour, which is left to dry in the oven for a few minutes, and from a mixture of almonds and butter. Simply dusted with a little powdered sugar, polvorones biscuits are perfect to enjoy at tea time on a cold winter afternoon. How to prepare the polvorones biscuits

Mix the almond flour with the type 00 flour (1).

Spread the flours on a baking tray, lined with parchment paper (2), and toast them in a preheated oven at 130°C for 20 minutes. Then remove from the oven and let cool.

Collect the toasted flour in the bowl, add the powdered sugar (3) and a pinch of salt, then mix.

Add a pinch of cinnamon (4).

Add the cold butter, cut into chunks (6), and start working the dough with your fingertips.

Transfer the dough to a work surface and knead it for about ten minutes, until a firm and homogeneous dough will be obtained (7). Wrap it with cling film and let it rest at room temperature for 20 minutes.

Lightly flour your work surface and roll out the dough with a rolling pin (8), until you will have a sheet of about 1 cm thick.
