- Powdered white sugar ¼ cup
- Salted butter ½ cup, softened to room temperature
- Vanilla Extract ½ teaspoon
- Flour ¾ cup
- Cinnamon powder ½ teaspoon
- A pinch of salt

Polvorones are the easiest vegetarian cookie recipe that is highly flavorful. You can enjoy these traditional Christmas cookies any time of the day as they are extremely addictive!
In a large bowl, whisk the powdered white sugar with salted butter until the mixture is nice and creamy in texture. Add the vanilla extract to this mixture and beat the mixture again until everything is well combined.
Add the flour, cinnamon powder, salt and mix everything until the mixture is kneaded in to a dough. Preheat the oven to 175 degrees C and line a baking tray with butter paper. Now, shape the dough in to 12 balls of even size. In a separate bowl prepare the cookie coating mixture by combining the powdered white sugar with the cinnamon. Roll each cookie ball very generously in to the coating mixture and then place them on the prepared baking tray.
Repeat with the entire cookie dough and then bake the cookies for about 10 to 12 minutes or until they are slightly golden brown in color. Cool the cookies and serve.
You may add a bit more flour or melted butter to combine the dough nicely. The dough will not be very soft and a little coarse and crumbly in texture.
