Potato Skin Sandwiches: healthy and tasty!

Don't use the bread but the potatoes, will be fantastic!

An alternative and tasty ideas for your party. Make these snacks to spend good time with good foods.

Ingredients: 4 potatoes, 1/4 cup extra-virgin olive oil, Salt, Pepper. For BLT: 4 slices bacon, 4 slices Cheddar cheese, 2 tbsp mayonnaise, 4 slices tomato, 1/4 red onion, 1/2 avocado, 2 leaves lettuce. For Caprese with Ham: 4 slices provolone cheese, 2 tbsp tomato pesto, 6 slices Ham, 1/2 cup arugula, 2 tbsp extra-virgin olive oil, 2 tbsp balsamic glaze.

Directions:

Bake potatoes at 400F/200C for an hour.

Using a spoon, remove a center of potato. Spread potato with an olive oil and put on baking-sheet, then broil it for 5-10 min until crispy.

Cook the bacon nearly for 15 min until crispy, next remove it to paper towel.

Get potatoes from the oven, cut their ends to potato resembles a rectangle, season them with salt and pepper.

For the BLT: Put Cheddar slices on each potato half, then place potatoes in the oven for 5 minutes, after that cool.

Assembling a sandwich with : spread each potato with mayonnaise, put bacon slices, some tomato, onion and avocado, lettuce leave. Cover by top half of potato.

For the caprese: Put slices of provolone cheese on potato halves, broil in the oven for 5 min, after that cool.

Assembling a sandwich: spread potatoes with pesto, add some slices of ham, arugula, then spread with an oil and balsamic glaze. Cover by top half of potato.
