The delicate flavor of the zucchini matches perfectly with the taste of the tuna; zucchini will be cooked in a pan and mixed with tuna, stale bread softened in water, breadcrumbs, grated Parmesan cheese, salt, pepper and parsley, then baked in the oven, for a lighter preparation light. How to prepare small patties with zucchini and tuna

Wash the zucchini, cut the ends (1) and then cut them into small pieces. Put the stale bread in a bowl with water to soften it (2). Brown the garlic in a pan with extra virgin olive oil. Add the zucchini (3) and cook over low heat and with the lid on for about 15 minutes; mix them often and add the salt almost at the end of cooking.

Once ready, remove the garlic and pour the zucchini into a large bowl. Add the squeezed bread, the drained tuna, the egg, the grated Parmesan cheese, salt, pepper and parsley and mix all the ingredients (4). Shape the patties with your hands, choose the size you prefer. Once ready, pass them in the breadcrumbs (5), place them on the baking tray lined with parchment paper, add a drizzle of oil and bake in a preheated oven at 180 degrees C for about 15 minutes: turn them halfway through cooking.
