Creamy and tasty, if you love fresh-baked homemade pie you must try this!


• 400g flour

• 130g icing sugar

• grated zest of 1 lemon

• 1/2 lemon, juiced

• 1 tsp baking powder

• 2 eggs

• 30ml vegetable oil


• 150g sugar

• 50g cornstarch

• 1 egg

• 80ml lemon juice

• grated zest of 1 lemon

• 500ml water


1. Prepare the cream by mixing all the ingredients in a saucepan. Put on the fire and bring to a boil, stirring constantly. Boil for a couple of minutes until the cream becomes thick. Allow it to cool completely, covering it with plastic wrap.

2. Mix all the ingredients of the dough. You will get a soft and not sticky dough.

3. Divide the dough into 2 parts, roll out and put the bottom cake in a rectangular baking form.

4. Top the dough with the cream.

5. Roll out the dough in a thin layer and cover the cream, seal the edges.

6. Bake at 180C/350F for about 35 minutes, until the dough turns golden brown.

7. Allow it to cool completely before slicing it into cubes.
