Vanilla Mug Cake

Basic, but delicious. Using a large coffee mug (sprayed with non-stick spray), melt 2 Tbsp butter in the microwave (or use oil). Add ¼ cup flour, 1 egg yolk, 2 Tbsp sugar, 1 tsp vanilla extract, and ¼ tsp baking powder. Mix thoroughly with a fork until it looks like cake batter. If you want, you can add sprinkles or chocolate chips at this step. Microwave for 45 to 60 seconds until the top of the cake becomes dry and begins pulling away from the sides of the mug. Cool for approximately 1 minute. Serve with ice-cream or cream.

Vegan Peanut Butter Mug Cake

This mug cake is deliciously good for you! In a large coffee mug (sprayed with non-stick spray), add 2 Tbsp flour, 2 Tbsp peanut butter, 2 Tbsp almond milk, 1 Tbsp maple syrup or sugar, ¼ tsp baking powder, and ½ tsp vanilla extract. Mix thoroughly with a fork until it looks like cake batter. If you want, you can add vegan chocolate chips or nuts at this step. Microwave for 45 to 60 seconds until the top of the cake becomes dry and begins pulling away from the sides of the mug.

Paleo Chocolate Mug Cake

Don’t miss out on cakes if you follow the Paleo diet. Here’s one for you! In a large coffee mug (sprayed with non-stick spray), mix together ¼ cup almond flour, 2 Tbsp cacao powder, 2 Tbsp maple syrup, 1 tsp coconut oil, 1 tsp vanilla extract and 1 egg. Microwave for 60 to 90 seconds until the top of the cake becomes dry and begins pulling away from the sides of the mug. Enjoy with any of the toppings mentioned below!

Cinnamon Roll Mug Cake

Craving for cinnamon buns? This will put that craving to rest! In a large coffee mug (sprayed with non-stick spray), add ¼ cup flour, ¼ tsp baking powder, 2 Tbsp milk, 1 Tbsp maple syrup or honey, ¼ tsp vanilla extract and 1 tsp vegetable oil. Mix thoroughly with a fork until it looks like thick cake batter. Top with a cinnamon sugar mixture (1 Tbsp sugar + ¼ tsp ground cinnamon). Microwave for about 90 seconds until the cake begins pulling away from the sides of the mug. Top with pecans and enjoy!

Red Velvet Mug Cake

If you love red velvet, you will love this mug cake! In a large coffee mug (sprayed with non-stick spray), combine 3 Tbsp vegetable oil, 3 Tbsp yoghurt, 1 tsp vanilla extract, 1 egg, and ½ tsp red food coloring. Mix thoroughly with a fork. Add in ¼ cup flour, ¼ cup sugar, 1/8 tsp baking powder, 1 ½ Tbsp cacao powder, and a pinch of salt. Mix thoroughly with a fork until it looks like thick cake batter. Microwave for about 50 seconds until the cake begins pulling away from the sides of the mug. Cover with cream cheese frosting.

Tips to make your mug cake a success

All the cooking times stated are applicable to the HIGH setting on your microwave. Make sure to check your mug cake carefully while in the microwave. If you overcook it, it will become spongy or rubbery.

To make your mug cake even more special, add any of the following extras: Nutella, peanut butter, coconut flakes, sprinkles (for vanilla cake), nuts, cinnamon, zested orange (works great with vanilla cake!), and chocolate chips.
