Want a tasty twist on a ham and cheese sandwich? Then this zucchini is just for you!, it’s not only delicious but nutritious too. And you don’t even need an oven. After making the dough, it’s simply baked in a pan, creating a filling of ham and cheese stuffed between the two layers of zucchini dough. It’s easy to make, and makes an ideal lunch, or light dinner. This is a ham and cheese toastie you don’t need to feel guilty about! It’s packed with deliciousness AND nutrition!

Zucchini Focaccia Ingredients

  • Zucchini – use any fresh zucchini (green or yellow)
  • Flour – all-purpose flour
  • Olive oil – extra virgin olive oil
  • Seasoning – salt, pepper, garlic powder
  • Ham – you can also use sliced turkey breast
  • Cheese – for a nice cheese pull, use Swiss cheese or Gruyere

How to Make Zucchini Focaccia

Prepare the zucchini. Grate the zucchini into a cheesecloth set over a large mixing bowl. Use the cheesecloth to squeeze out most of the excess liquid. Transfer the zucchini to another clean, dry bowl.

Now make the dough. To the zucchini, add the flour, water, olive oil, salt, pepper, and mix very well. Divide the dough in two.

To cook the dough, place one half in a pan set over medium heat. Add ham and cheese and top with the other dough half.

Cook until the bottom starts to brown, then use a large plate to flip the dough over. Continue to cook until the dough is cooked through and both sides are golden brown.

Tips

You can use other ingredients for the filling too. Use bacon, smoked chicken, or turkey breast instead of ham.

Sliced olives, sundried tomato, chilies, or red pepper can all be used to add flavor to the filling.

How to Store Zucchini Focaccia

Store leftovers in the fridge for up to 3 days. Keep it in an airtight container.

Ingredients

Zucchini
200g (10.5 oz)
Flour
320g (3 cups)
Water
70ml (1/3 cup)
Olive oil
salt and pepper
2 slices of cheese
2 large slices of ham
Garlic powder

METHOD

Place a cheesecloth or muslin cloth in a bowl. Grate the zucchini over the bowl.

Bring together the ends of the cloth,

then squeeze out the excess liquid.

Place the drained zucchini in a bowl.

Add flour, water, olive oil, salt, pepper, and mix very well.

Divide the dough into two.

Place one of the balls into a pan, using your hands to spread the dough over the pan.

Place the cheese and ham on top.

Add the other half of the zucchini dough.

Cook until the bottom starts to brown.

Use a large plate to flip the dough over.

Continue to cook until the dough is cooked through and both sides are golden brown.

Slice and serve.
