For a fast lunch or dinner, this recipe is ideal.

Ingredients: 4 medium tomatoes; 1 ball mozzarella cheese; 4 tbsp olive oil; a pinch of salt and pepper; 4 slices prosciutto, chopped; store-bought pizza dough; dried oregano, fresh basil for garnish.

Directions:

1)Preheat your oven to 180C (350F). Cover baking pan with parchment or foil.

2)Cut the top of the tomato off and scoop all the insides using a spoon.

3)Blend cheese and olive oil until smooth paste forms. Season with salt and pepper to taste.

4)Fil each tomato cup with prosciutto, top with blended cheese.

5)Roll out the pizza dough and cut it into circles to fit tomatoes. Wrap tomatoes in pizza dough and place onto a prepared baking pan.

6)Bake for 20-25 minutes or until the dough is fully cooked and golden brown.

7) Garnish with oregano and basil leaves before serving.
