It’s perfect for this time of year when apples are at the forefront of most recipes. To make the apple cakes, you simply core and slice apples, cover them with a homemade batter and fry until golden. Easy, delicious, and impressive too. You can serve the apple cakes on their own with a dusting of powdered sugar, or make it a full dessert by adding a dollop of fresh cream, or a scoop of ice cream.

Tips

– Short on time? Use store-bought pancake mix instead.

– As a variation, you can toss drizzle the apple cakes with melted dark chocolate or caramel sauce. Alternatively, you can add a glaze of icing, a cream cheese frosting,

– Use a neutral oil for frying: canola, peanut, or sunflower oil are all suitable.

Make sure your oil is at the right temperature (use a thermometer if necessary). If it’s too hot, the apple cakes will burn before it’s cooked through.

If the oil is too cold, it will soak up too much oil and become greasy.

160g (3/4 cup)
Milk
60ml (1/4 cup)
1 lemon zest
Flour
160g (1 1/4 cups)
Cornstarch
110g (1 cup)
Baking powder

1 lemon juice
light brown sugar
30g (1/4 cup)
Cinnamon
Powdered sugar

How To Make Apple Cakes

In a bowl add the eggs, egg yolks, and sugar and mix with the electric mixer until sugar dissolves.

Add the milk, lemon (zest), flour, cornstarch, and baking powder and mix until combined. Transfer the mixture to a piping bag and set aside.

Peel and remove the core from the apples.

Cut the apples into slices.

In a bowl add the lemon juice, light brown sugar, and cinnamon and whisk to combine. Add the apple slices and mix them well with the juice.

Transfer the apple slices to the pan.

Pipe the prepared batter onto the apple slices.

Cover with a lid and let it cook for 10 minutes. After 10 minutes flip them over and let them cook for a few more minutes until golden brown and cooked through.

Serve the apple slices on a serving plate and dust with powdered sugar.
