Made with grated apples, warm cinnamon, and a hint of vanilla, these pancakes are a delightful twist on the classic breakfast pancake. Each bite is bursting with the natural sweetness of the apples, with the fluffiness you’d expect from pancakes. Whether you enjoy them on a lazy Sunday morning or as a special weekday treat, they’re easy to make (and even easier to eat!). You probably already have all the ingredients in your kitchen: apples, cinnamon, yogurt, flour, sugar, and baking powder. Simply whip up a batter, add the grated apple, and cook in a preheated pan. Breakfast made easy!

How to Make Apple Pancakes

Prepare the batter first. In a large mixing bowl, mix together the egg, sugar, vanilla, vegetable oil, and yogurt.  In another bowl, whisk together the flour, baking powder, cinnamon, and salt.

Prepare the apples by grating them on the coarse side of a box grater. Fold the grated apple into the batter.

Cook the pancakes. Brush a bit of oil onto a pan over medium heat. Cook scoops of pancake batter until fully cooked through and golden brown on both sides.

Tips

Use any apple variety for this recipe. If you like a more tart apple, go for Granny Smith. Otherwise, a Gala apple is also a good choice. It’s not too sweet, with great apple flavor.

If you want some added nutrition, there is no need to peel the apples first, you can leave the skin on!

Don’t make the pan too hot, instead cook over medium heat. If the pan is too hot, the batter will cook before it spread completely to the sides.

Use a neutral oil for frying: canola, peanut, or sunflower oil are all suitable.

If you’re making a large batch, your apple slices might start browning. To prevent this, you can place them in a bowl of cold water with a splash of lemon juice.

How to Store Apple Pancakes

Store leftovers in the fridge for up to 3 days. Reheat in the oven or Airfryer.

What To Serve With Apple Pancakes

Serve the apple pancakes on their own or with a bit of honey and whipped cream. Turn them into a full-on breakfast by serving them with pork sausages, and a drizzle of maple syrup.

To serve the pancakes for dessert, drizzle the pancakes with a cream cheese icing. Simply whisk together 4 ounces cream cheese, 1/2 cup confectioners' sugar (or powdered sugar), 1 teaspoon pure vanilla extract, and about 3 to 4 tablespoons milk.

Ingredients

Egg

Sugar
40g (3 tbsp)
Vanilla Extract
½ tsp
Vegetable Oil
30ml (2 tbsp)
Yogurt
150g (⅔ cup)
All purpose flour
200g (1 ⅔ cups)
Baking powder
8g (2 tsp)
medium apple

A pinch of cinnamon powder
A pinch of salt

Instructions

In a medium bowl whisk eggs with sugar, yogurt, vanilla, and vegetable oil.

Sift the flour, baking powder, salt, and cinnamon into another clean mixing bowl.

Pour the liquid ingredients into the dry mixture and mix to combine.

Grate one apple using a large grater.

Add to the batter, and stir to combine.

Use an ice cream scoop to scoop a portion of the batter onto an oiled preheated pan.

Cook the pancakes until bubbles start to appear on the surface.

Flip and cook the pancakes until brown on both sides.
