This omelet recipe is easy and quick to make, it’s perfect for a quick dinner. You can fill it with anything you like and could be a great way to use up leftovers!
Ingredients: for the omelettes: 3 eggs, salt, pepper, chives, olive oil. For the filling: ham, provola cheese, grilled zucchini
1. Beat the eggs together with salt, pepper and chives.
2. In a pan with olive oil, fry the omelets and let them cool.
3. With the help of a springform cake pan, layer the omelet and any other ingredients you like.
4. Bake at 180°C for 20 minutes.
If you love omelette, we suggest you also this version with bell peppers.
1 Red Pepper.
50g Ham (around three slices).
20g Chives (snipped).
50g Mozzarella Cheese.
50g Cheddar Cheese.
4 Slices of Bread.
Dice your red pepper, onion and ham.
Lightly beat together the eggs.
Add in the pepper, onions, ham, chives and both types of cheese.
Season with salt and pepper and mix together.
Line a baking tray approximately 28cm by 23cm with baking parchment.
Place 4 slices of bread in the base of the baking tray.
Pour in your egg mix and bake in the oven at 180°C or 350F for 20-23 minutes.
Allow to cool a little before cutting.
