Chicken and waffle nachos: your guests will appreciate this very much

Nachos are a very traditional snack in Mexico, especially in north of the country, that use to be served with a melted cheese, some vegetables and meat or chicken. This recipe includes the ingredients mentioned before and in addition of the very characteristic hot flavor of Mexican food. Even though nachos are Mexican, you can find them in many countries, including little variations, with some typical ingredients of the place. In this preparation it is tried to preserve the original flavors making all by ourselves, from the waffles to the chicken. This fact makes then special for us and our guests will appreciate this very much, and surely, they will recognize that our nachos are made at home.

Instructions

It is recommended to start the recipe preparing the waffles. They will be used as toasted tortillas that usually accompany the rest of the ingredients. Melt the butter.

Separate the egg whites and yolks in two medium size bowls. Beat up the white eggs until stiff and reserve. Now beat up the egg yolks and pour the milk. When they are well mixed add the butter and integer the mixture very well. Using a large bowl, sieve the flour and the baking powder, and add the salt. Then add the egg yolks very slowly and mix everything very well in order to avoid the lumps presence in the mixture. Once all the ingredients are well mixed, proceed to add the eggs white and mix using an evolving movement with a wooden spoon. Avoid to stir very much. Now cook the mixture in a waffle machine (it takes about 3 minutes for each waffle. Next to this, if waffles are not enough crunchy, you can use the oven. Preheat the oven at 200°C/ 375 °F. Cut up the waffles in chips and put in a baking tray. Let the waffles in the oven for about 5 minutes or until the chips are crunchy. Reserve and prepare the rest. Put the chicken breast in a baking tray with some olive oil. Use a bowl to add the honey and the hot sauce and stir until mixed very well and preserve. Now in a frying pan, with some olive oil, cook the bacon and cut up in little squares. Put a non-stick pan over medium high heat, add a little oil; when it is hot, put the chicken, cook until golden brown on all sides.

Let cool the chicken and cut up in small pieces. Pour the honey-hot sauce mixture over the chicken and add the bacon and the grated cheddar cheese. Introduce again in the oven until cheese is already melted (about 10 minutes) Place the waffles in a bowl and add some chicken over them. Always serve hot.
