They’re easy to make, and you don’t need a lot of ingredients: melted chocolate, whipping cream, condensed milk, and pineapple juice.

They’re great treats for adults and kids alike and perfect for a party. With each bite, you get the rich flavor from the chocolate, with a fudgy texture from the condensed milk. You won’t regret making these homemade chocolate ice cream bars, you’ll be surprised at how easy it is!

Chocolate Ice Cream Bar Ingredients

Chocolate – use high-quality baking chocolate (not the chocolate bars from the candy aisle!).

Whipping cream – use full fat for best results.

Condensed milk – make sure to use sweetened condensed milk and not evaporate milk.

Pineapple juice – adds flavor and sweetness.

How To Make Chocolate Ice Cream Bars

Start with the chocolate shell. Melt the chocolate and add the first layer into the glass on all sides with the teaspoon. Swirl the glass to make sure it’s completely coated. Refrigerate for 10 minutes.

Make the ice cream filling. With an electric mixer, beat together the whipping cream, condensed milk, and pineapple juice until smooth.

Once the chocolate has hardened in the fridge, add the ice cream mixture to the chocolate glasses. Stick an ice cream stick in the cream, then finish off with more of the melted chocolate. Freeze for at least 2 hours before serving.

Tips For Making Chocolate-Covered Ice Cream Bars

You can also use a popsicle mold if you have one.

If you don’t have chocolate, you can make your own “melted chocolate” with cocoa powder.

Mix together 1 cup cocoa powder with 2/3 cup butter or coconut oil.

To make the chocolate coating shiny and add a bit of luster, you can add a teaspoon or two of coconut oil to the melted chocolate.

Add a teaspoon of instant coffee to the cream mixture for a cappuccino-flavored ice cream bar.

If you’re struggling to remove the popsicles from the plastic glass mold, you can run warm water on the outside.

How To Store Chocolate Ice Cream Bars

Instructions

Place the chocolate in a microwave-safe bowl and let it melt for about 30 seconds, stirring halfway through cooking.

Add the first layer into the glass on all sides with the teaspoon. Transfer to the fridge for 10 minutes.

In a bowl add the whipping cream, condensed milk, and pineapple juice.

Mix with an electric mixer.

After time has elapsed fill the glasses with the cream.

Add the ice cream stick to the cream.

Top with another layer of chocolate. Transfer the glasses into the freezer for 2 hours.

After two hours remove the plastic glasses and serve the ice cream.
