The citrus chicken is a colorful and tasty second dish that can be quickly prepared and it is perfect for midweek dinners, when maybe you don't have much time to cook. The trick is to pass the meat in a light sprinkling of flour, which allows you to obtain a creamy dish and which goes well with a side dish of raw vegetables or a fresh salad. The addition of citrus juice makes the chicken breast soft and tasty: try the recipe and tell us what you think.
Cut the chicken breast into cubes about 5 cm on each side. Pass it in the flour (1).
Peel and finely chop the spring onion, then let it dry in the pan with the oil. Add the chicken and brown it well on each side. (2)
Meanwhile, squeeze the citrus juice and set it aside (3).
Simmer the chicken with the citrus juice. Add a couple of ladles of broth and cook for about ten minutes, until the chicken is soft (4).
Decorate with citrus zest and serve hot (5).
If you want to make a gluten-free recipe, replace the flour with potato starch or rice flour: the dish will not lose taste but it will be perfect to be served also to celiac guests.
You can also make this recipe with chicken legs, so it will take a few minutes less cooking. If you prefer, blend the chicken only with orange juice or lemon juice. Flavor the recipe with your favorite aromatic herbs: mint, thyme or rosemary will do just fine. You can also add spices like curry and paprika to give the dish an exotic touch.
