This coleslaw salad, which is reputed to be American, is actually native to Southern Europe.
It is a salad consisting of raw finely chopped cabbage and grated carrot, although there are many variants of the recipe in which you can carry, pineapple, apple… mix with a dressing that just like the rest of ingredient changes depending of the areas. Usually, with a vinaigrette to which is added other ingredients such as mayonnaise, fresh cheese, mustard …
It is usually seasoned a little before to let it rest and that all the ingredients are well integrated.
It is very colorful, healthy, simple, cheap and good.
Wash the cabbage and carrots very well. Peel the carrots and pineapple. Cut the cabbage into thin slices (better with mandolin). Grate the carrot and pineapple. Cut the onion into small cubes (the more guys the better).
Although optional, we also add some purple cabbage because it gives a beautiful color to the salad.
Mix the cream with mayonnaise, mustard, sugar, vinegar, salt and pepper and add to the salad.
