In a large skillet, heat the olive oil and then add the chicken breasts, diced onion, diced garlic, salt and pepper. Cook the chicken over medium heat for about 10 minutes.

- Cover the pan and steam the broccoli over medium heat for about 10 minutes or until the broccoli is slightly soft and bright green.

Tips
-Use chicken thighs or chicken legs in this recipe and you will have equally delicious results!
-If you are not a huge fan of broccoli, try using zucchini or spinach in its place Feel free to skip the vegetable completely if you'd like, the chicken and rice will still be tasty.
-Quinoa and couscous are also a great accompaniment to this dish. The possibilities are endless.
